Here is a great recipe for Mexican Lettuce Wraps .

You get to eat 2 wraps and you will only intake 259 calories, 8 g fat and 19 g carbohydrate.....hello, awesome!!

What you need to get started........
  • 3 cups cubed cooked chicken breast
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 medium tomato, seeded and finely chopped
  • 1 can (4 ounces) chopped green chilies
  • 1/2 cup salsa
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped sweet red pepper
  • 1 tablespoon lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon garlic powder
  • 1 medium ripe avocado, peeled and finely chopped
  • 1/2 cup reduced-fat sour cream
  • 12 Bibb or Boston lettuce leaves
See an ingredient that you like, add more. See an ingredient that you don't like, replace it with something else. I love to use an entire red pepper and ever since I was nauseous with my first child, no avocado :) Try a can of corn in the mix or whatever sounds good to you. I couldn't find Boston lettuce so I used big pieces of Romaine lettuce.

How to make it: In a large bowl combine the first 11 ingredients. Refrigerate until serving. Just before serving stir in avocado. On each lettuce leaf, spread sour cream and then place 1/2 cup chicken mixture on top of the sour cream. There you have it! Simple, easy and VERY healthy.
Serve these wraps with some fresh melon or pineapple and you have a perfect meal your family will love.
